Upgraded nozzle now nothing is working right

Decided to try a better than stock nozzle. It’s a .4mm as well but a lot larger so I had to go through the days of adjusting my z offset with bltouch. Finally switched back to stock nozzle trying to find the offset again with no luck. I get close then it changes.

Things I’ve tried:
Tighten all axis rollers and measure to frame to confirm level.
Different ways to get the offset...using just lcd panel and using Arduino gcodes etc
My nozzle is 1.016mm (.040”) below the bltouch.
Shouldn’t I be able to put -1.016 z offset in marlin once and be done?!? Am I missing some math here?
Use Cura 3.6 to prepare my prints then transfer to sdcard

Any help would be awesome!! I was printing all kinds of things no problem
